Pecan pie is a sweet dish made with pecan nuts and corn syrup. Although its origin is unknown, it is said to be a specialty of the Southern US' cuisine and is also quite popular in New Orleans. It has become a favorite dish of people all around the world and is made especially during the holidays. Moreover, people have found different ways of making it. One amongst them is pecan pie bars which are quite easy to make. The sweet taste along with the crunchy effect of the pecans makes them a favorite among the young and old, alike. Hence, here are some recipes for making these chunky bars. Recipe 1 Ingredients
  • 3 cups flour
  • 3 tablespoons margarine, melted
  • 2½ cups pecans, chopped
  • ½ teaspoon salt
  • 1½ cups white sugar
  • 4 eggs
  • 1½ teaspoons vanilla extract
  • 1 cup margarine
  • 1½ cups light corn syrup
  • 4 ounces white sugar
Preparation Take the flour in a large mixing bowl and add the ½ cup of white sugar, and salt. Mix well and then add the 1 cup of margarine. Continue mixing till the mixture starts to look like coarse crumbs. Take a 10x15 inch jellyroll pan and grease it lightly. Spread the mixture into this pan and place it in a 350 °F preheated oven for 20 minutes. Meanwhile, start preparing the filling for the pie crust. For this, mix the 4 eggs, 1 cup of sugar, vanilla extract, corn syrup, and 3 tablespoons of margarine in a bowl, until the mixture attains a smooth texture; add the pecans at the end. Once the crust is done, take it out of the oven and spread the filling over it, evenly. Place the pan in the oven again and bake for 25 minutes or till the filling is fully set. Place the pan on a wire rack and when it completely cools, slice the pie in the shape of bars. Recipe 2 Ingredients
  • 3 cups flour
  • 1 cup butter, softened
  • 1½ teaspoons vanilla extract
  • 6 sq. semisweet chocolate
  • 2½ cups pecans, chopped
  • 4 eggs, slightly beaten
  • ½ teaspoon salt
  • 2 cups sugar, divided
  • 1½ cups corn syrup
Preparation Take ½ a cup of the sugar, with the salt, flour, and butter in a mixing bowl, and blend them together with a hand blender at a medium speed, till the mixture starts to look like coarse crumbs. Lightly grease a baking pan and pour the batter into it. Bake the mixture in the oven for 20 minutes at 350 °F. Meanwhile, mix the semisweet chocolate and corn syrup in a saucepan and stir the concoction on very low heat, till the chocolate melts completely. Take the saucepan off the stove and add the 4 eggs, remaining sugar, and the vanilla extract. Blend these ingredients together till the mixture becomes smooth. Once this is done, stir in the chopped pecans. Spread this on the pie base and bake it again for 30 minutes. Cool the crust and chop it into 1½-inch bars. These bars are best served with freshly whipped cream.
