Guacamole
Ingredients • 2 avocados • 1 tbsp chopped cilantro • 1 juicy tomato • ½ tsp finely chopped garlic • ½ cup finely chopped onion • 2 tsp lime juice • Salt and cayenne pepper powder to taste
Serves: 2 Preparation Time: 12 - 15 minutes Accompaniments: Tortilla chips Method Peel and mash the avocados with salt, cayenne pepper powder and lime juice. Add the onions, tomatoes and garlic, and give it a whip. Sprinkle cilantro on top.
Red Roast Dip
Ingredients • 3 medium-sized red bell peppers • 12 tsp olive oil • ¼ tsp garlic powder • ¼ tsp onion powder • 8 oz cream cheese • Salt and pepper to taste
Serves: 2 Preparation Time: 50 - 55 minutes Accompaniments : Cheese crackers, diced veggies Method Slice the red peppers in strips and toss them in a bowl along with olive oil, garlic powder, onion powder, salt and pepper, till all the strips are well coated in the olive oil dressing. Let it rest for about 10 - 15 minutes. Place these strips in a baking dish and bake them in a pre-heated 450° F oven for about 20 minutes. In a blender, blend the baked red pepper strips (along with its leftover dressing) and cream cheese. Add salt if required.
Bacon 'n' Blue Cheese Dip
Ingredients • 5 - 6 smoked, lean bacon strips • ½ lb crumbled blue cheese • ½ cup milk • ½ cup beer • ½ cup finely chopped onion • 2 - 3 tbsp general purpose flour • 1 tsp Worcestershire sauce • Salt and cayenne pepper powder to taste
Serves: 2 Preparation Time: 40 - 45 minutes Accompaniments : Potato chips, herb crackers, breadsticks Method Fry the bacon strips over moderate heat till they are crisp. Stir fry the onion in a tablespoon of the fried bacon's leftover oil. Add general purpose flour and keep stirring for a couple of minutes. Whisk in the milk, beer and Worcestershire sauce. Bring it to a low boil and then stir in the crumbled blue cheese. Crumble the fried bacon strips and stir it in too. Remove from the heat, but keep whisking/stirring till all the cheese melts. Serve hot.
Hummus
Ingredients • 24 oz chickpeas • 1 tsp chopped garlic • 1 tsp cumin powder • 2 tbsp sesame seeds • ½ tsp sesame oil • 2 tsp lime juice • Salt to taste
Serves: 2 Preparation Time: 25 - 30 minutes Accompaniments : Toasted pita, tortilla chips Method For the tahini paste, blend the sesame seeds in a blender. Whisk along sesame oil, salt and warm water, until the paste is smooth. For the hummus, blend together chickpeas, tahini paste, olive oil, garlic, cumin powder and lime juice. If the blend is too dry, to attain perfect smoothness, add a little water as and when required.
Hot Chorizo Dip
Ingredients • 2 Chorizo sausages (diced) • 12 oz tomato sauce/tomato puree • 1 tsp of dried Italian herbs (basil, oregano, sage, rosemary) • ½ tsp finely chopped garlic • ½ cup finely chopped onion • 1 tbsp chopped pitted black olives • Salt, sugar and cayenne pepper powder to taste
Serves: 2 Preparation Time: 25 - 30 minutes Accompaniments : Potato chips, potato wedges, diced veggies Method In a large saucepan, heat some olive oil. Saute the onions, garlic and chorizo, until the meat is tender and the onions are golden brown. Remove the excess oil and add the tomato sauce/puree, herbs, and a pinch of sugar and cayenne pepper powder each. Cover and cook for about 10 minutes. Season with salt and stir-in the olives.
Creamy Crab Dip
Ingredients • ½ cup cooked crab meat • 4 oz softened cream cheese • 1½ tsp sour cream • 1½ tsp mayonnaise • Salt to taste
Serves: 2 Preparation Time: 12 - 15 minutes Accompaniments : Potato chips, fried fish fingers, bagel chips Method In a large and deep baking dish, mix the cream cheese, sour cream, and mayonnaise together, and whisk gently. Stir in the crab meat and salt to taste, and gently whisk again. Put the baking dish in an oven that is pre-heated at 350° F. Bake for about 6 - 8 minutes. Serve hot.
Three Cheese Dip
Ingredients • 4 oz cheddar cheese • 4 oz softened cream cheese • 2 oz pepper jack cheese • 1 tbsp mayonnaise • 1 tbsp grated horseradish • 2 tsp chopped garlic • Salt and pepper to taste
Serves: 2 Preparation Time: 12 - 15 minutes Accompaniments : Potato chips, herbed crackers, assorted veggie chips, breadsticks Method Combine all the ingredients except the cheddar and pepper, and whisk rapidly. Set aside for a while (approximately 5 minutes). Season with salt and pepper. Stir-in both the cheeses. Chill for 30 minutes before serving.
White Bean Dip
Ingredients • 4 oz cannellini beans • 1 tsp chopped garlic • ½ tsp lemon juice • 1 tsp oregano • 1 tsp chopped parsley • Salt and pepper to taste
Serves: 2 Preparation Time: 12 - 15 minutes Accompaniments : Potato chips, toasted pita Method In a blender, blend coarsely, cannellini beans, garlic, lemon juice, parsley and oregano. Drizzle with olive oil. Season with salt and pepper, and serve.
Herbed Goat Cheese Dip
Ingredients • 4 oz goat cheese • 1 tsp each of fresh parsley, chives, sage, rosemary, oregano and basil • Salt and pepper to taste
Serves: 2 Preparation Time: 12 - 15 minutes Accompaniments : Potato chips, toasted pita, sliced toasted baguette Method Combine all the ingredients and mix well. Season with salt and pepper, as required. Give an optional drizzle of olive oil, and serve.
Dessert Dip
Ingredients • 6 oz cream cheese • 6 oz marshmallow cream • Chunks of fresh fruits (seasonal or your favorite ones)
Serves: 2 Preparation Time: 8 - 10 minutes Accompaniments : Fresh fruit slices, pretzels Method Whisk together all the ingredients except the fruit chunks, until smooth and creamy. Refrigerate for an hour or so. Add the chunks of fruits prior to serving, and fold them gently in the dip. Note Your favorite fruit syrup/pulp/juice/extract can be added for extra flavor. If the dip is to be served with sliced fresh fruits, strawberry flavor works very well.
