White Pizza Dip Ingredients
  • Sour cream, 1 cup
  • Ricotta cheese, 1 cup
  • Mozzarella cheese, shredded, 1 cup

Directions In a microwave-safe bowl, mix all the ingredients properly and place it inside the microwave till the mixture melts properly. Bring the bowl out and stir the mixture properly. Once the ricotta and mozzarella cheeses have melted, serve with pizza crusts or Italian bread. Dip for Vegetables Ingredients
  • Ricotta cheese, 1 cup
  • Extra-virgin olive oil, 2 tablespoons
  • Parsley, chopped, 1 tablespoon
  • Lemon zest, 1 teaspoon
  • Garlic cloves, with skin, 4
  • Salt and black pepper, for taste
Directions In a microwave-safe bowl, place garlic cloves and cover the bowl with Saran wrap. Heat in the microwave for 1½ minutes and remove the skin off latter. Add salt and black pepper to the cloves; and then chopped parsley. Use a fork to mix everything together, and add the cheese to make a paste. Simultaneously, add lemon zest and olive oil in the bowl as well. Once the consistency is up to your liking, do a taste test and serve the dip with fresh vegetables. Spinach-Ricotta Manicotti Ingredients
  • Tomato-basil pasta sauce, 6½ cups
  • Parmesan cheese, grated, ½ cup
  • Onion, minced, ½ cup
  • Parsley, minced, 2 teaspoons
  • Water, 1½ cups
  • Mozzarella cheese, 1½ cups
  • Manicotti shells, 1 packet
  • Spinach, chopped, 1 packet
  • Ricotta cheese, 1 can
  • Garlic powder, ¼ teaspoon
  • Egg, 1
  • Salt and black pepper, for taste
Directions Preheat the oven at 350ºF. Take a bowl to mix spinach, the cheese, onion, and egg together. Add parsley, salt, garlic powder, and black pepper in. Mix everything together and add 1 cup mozzarella cheese along with ¼ cup Parmesan cheese. In a different bowl, mix water with pasta sauce and keep it aside. Then take a baking dish and spread at least 1 cup of sauce at the bottom. Start filling the manicotti shells with the mixture we just prepared, and place it in the baking dish in one layer. Spread the rest of the sauce on top evenly, and add the rest of the cheeses on top. Place the dish inside the oven, and bake the pasta for 40 to 50 minutes. Once ready, serve it warm. 3-Cheese Lasagna Ingredients
  • Ricotta cheese, 4 cups
  • Mozzarella cheese, shredded, 2 cups
  • Italian seasoning, 1 teaspoon
  • Olive oil, 1 teaspoon
  • Lasagna noodles, 1 packet
  • Parmesan cheese, grated, ½ cup
  • Eggs, 4
  • Garlic cloves, minced, 3
  • Salt and black pepper, for taste
Directions Preheat the oven at 350ºF. Boil a pot of water, and add salt and olive oil in. Cook the pasta in the salted water as per the instructions given on the packet. When the pasta is ready, drain the water, and place the lasagna on aluminum foil to cool down. In a bowl, mix Parmesan cheese, eggs, salt, and black pepper together. In a pan, heat olive oil and add the garlic in to cook for a minute. Add the pasta sauce in, and then the Italian seasoning. Heat it for 3 to 5 minutes, and keep stirring in between. In a baking dish, place ½ cup of pasta sauce in, and spread a layer of lasagna. Add more sauce over the pasta to cover it properly, and then the pasta again. Keep making layers till the baking dish is filled properly. Add the rest of the sauce on top, and sprinkle generous amount of mozzarella cheese. Place an oiled aluminum foil, and bake for about 40 to 45 minutes. When the cheese begins to bubble and turns golden brown on top, your lasagna is ready to be served. Ras Malai (Cheese Dumplings) Ingredients
  • Half and half, 3 cups
  • Pistachio, chopped, 2 teaspoons
  • White sugar, 1¼ cups
  • Almonds, blanched and slivered, 1 tablespoon
  • Ricotta cheese, 1 can
  • Rose water, ½ teaspoon
  • Cardamom, ground, ¼ teaspoon
  • Pinch of saffron
Directions Preheat the oven at 350ºF. In a bowl, mix the cheese and ¼ cup sugar with a hand blender. Make 12 parts of the dough, and put in individual muffin cups that have been greased with butter. Place the cups inside the oven, and bake for 30 to 40 minutes. Once ready, bring the cups out and let it cool down for about 10 minutes. Meanwhile, in a pan, add half and half and simmer it for 10 minutes. Add 1 cup sugar, rose water, saffron, and cardamom inside. Stir properly and remove the pan off the stove to cool down completely. When the cream sauce is cool, add the cheese balls inside and sprinkle pistachio and almonds in. Stir one more time, and place inside the refrigerator to chill before you serve it. Ricotta Cheese Cookies Ingredients
  • Ricotta cheese, 15 oz.
  • All-purpose flour, 4 cups
  • White sugar, 2 cups
  • Confectioners' sugar, 1½ cups
  • Butter, room temperature, 1 cup
  • Whole milk, 3 tablespoons
  • Baking powder, 2 tablespoons
  • Vanilla extract, 2 teaspoons
  • Salt, 1 teaspoon
  • Eggs, 2
Directions Preheat the oven at 350ºF and place parchment paper over the baking sheet. In a bowl, mix sugar and butter till well incorporated. Beat till the mixture is light at medium to high speed. In the end, lower the speed till medium-low and add the cheese, vanilla extract, and eggs in. After that, reduce the speed to low and add flour, salt, and baking powder. Beat till you have the dough ready. Now take a spoon and scoop the dough onto the baking sheet. Take as many baking sheets as required, all lined with parchment paper. Place the sheets inside the oven and bake the cookies for 15 minutes. When the cookies turn golden brown from top, remove the sheets. Place the cookies on the cookie rack to cool down. Meanwhile, in a bowl, mix confectioner's sugar and milk together. Spread the icing on top of the cookies and sprinkle more powdered or colored sugar. Serve with cold milk.
