  • 2 fully ripe avocados (peeled and pitted)
  • 1 fresh lime (juiced)
  • ¼ cup red onion (finely chopped)
  • 1 small garlic clove (finely chopped)
  • 2 tablespoons cilantro (chopped)
  • 1 tablespoon jalapeño pepper (finely chopped)
  • ½ teaspoon black pepper
  • 1 teaspoon kosher salt
Procedure Take the peeled and pitted avocados in a large bowl. Sprinkle the lime juice over them and crush them lightly using a fork. Toss the avocados for mixing them evenly with the lime juice. Then, add the remaining ingredients―onion, garlic, cilantro, pepper, and salt. Toss the mixture lightly and serve. This guacamole appetizer recipe tastes best when chilled. So, if time permits, you can keep it in the refrigerator for 2-3 hours before serving. Ground Chicken Meatball Ingredients
  • 1½ pounds ground chicken (or pork)
  • ¼ cup scallions (minced)
  • 1 garlic clove (crushed)
  • 2½ tablespoons ginger (peeled and grated)
  • ¼ teaspoon ground pepper
  • ½ cup teriyaki sauce (thick)
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • Toasted sesame seeds (for garnish)
  • 1 large egg white
  • Salt as per taste
Procedure In a large mixing bowl, whisk the egg white and stir in the scallions, ginger, garlic, soy sauce, sesame oil, pepper, and salt. Combine the mixture until it is well-blended. Add the chicken and mix thoroughly with your hand. Then, make 30 meatballs of about 1½-inch size. Following this, heat a large nonstick frying pan over a medium flame, and lightly spray it with cooking spray. When the skillet is ready, add half of the meatballs, and sauté for about 5 minutes or until they turn firm and light brown. Repeat the same with the remaining meatballs. In the meantime, preheat oven to 425 °F. Place the partly cooked meatballs in a baking sheet and brush them lightly with the teriyaki sauce. Bake them for about 10 minutes and make sure that the meatballs are cooked properly. Transfer the meatballs to a platter and brush them again with the remaining sauce. Garnish with toasted sesame seeds and serve hot. Chicken Wings Ingredients
  • 2 dozen chicken wings (ready to cook)
  • 1 cup butter (unsalted)
  • 1½ cups all-purpose flour
  • 6 tablespoons sesame seeds (toasted)
  • 1 teaspoon ginger (grounded)
  • 2 teaspoons salt
  • Pepper as per taste
Procedure Take a large pie plate and combine these ingredients―flour, ginger, sesame seeds, salt, and pepper. Heat a large shallow pan and melt the butter in it. Dip the chicken wings one at a time in the melted butter and transfer them to the flour mixture. Ensure that the chicken pieces are coated with the flour mixture from all sides. Preheat the oven to 355 °F. Now, place the coated chicken wings in the same pan (making it one layer) to soak the remaining butter and bake for about an hour. To tenderize the baked chicken wings, use a broiler for 5 minutes. Garnish with seasoning and serve.
