Directions In a mixing bowl, mix flour, cinnamon, baking soda, and baking powder by sifting through a sieve. Beat eggs in another large mixing bowl. Add sugar and vanilla to it. Mix till all the ingredients get blended properly. Add the dry ingredients that were mixed earlier into the large mixing bowl and stir well. Fold in the zucchini and nuts into this mixture and stir once. Grease two 8x4 inch baking pans and lightly dust them with flour.   • Baking Powder, 3 tsp.
  • Butter, (melted) 2 tbsp.
  • Ground Cinnamon, 1 tsp.
  • Eggs, (lightly beaten) 2
  • Salt, ½ tsp.
  • Baking Soda, 1 tsp.
  • Buttermilk, 12 oz.
  • Lemon, (zest)
  • Orange, (zest)
  • Walnuts, (chopped) 4 oz.
Directions In a large mixing bowl, beat eggs, melted butter and buttermilk together. Add brown sugar to this mixture and whisk the ingredients together. Stir carrots, zucchini, lemon, and orange zests into this and set aside. In another bowl, sift baking powder, flour, cinnamon, and baking soda together. Combine these dry ingredients in the large mixing bowl and beat till all the ingredients are fully combined. Sprinkle the chopped walnuts into the batter and stir once.
