  • Sugar, ⅓ cup (granulated)
  • Shortening, ½ cup
  • Butter, ½ cup
  • Egg, 1
  • Vanilla Extract, 1 tsp.
Preparation Preheat the oven to 350° F. Then blend sugar, butter, and the shortening till it turns into a smooth mixture. Stir in the vanilla extract along with the egg. Sift baking soda, cream of tartar, and flour together. Mix some sugar with this mixture. Then you would need to roll the dough into small-sized balls. These balls have to be infused with some chopped nuts. This should be followed by rolling the balls into the sugar mixture. Use a non-greasy cookie sheet to place these balls and bake the same for a period of 12 to 15 minutes. Once the cookies turn light brown, let them cool down and then serve. Yellow Pea Soup Ingredients
  • Whole Dried Yellow Peas, 1 lb. (split peas are acceptable)
  • Onions, 2 (finely chopped)
  • Marjoram, ¼ tsp.
  • Thyme, ½ tsp.
  • Salt, to taste
  • Whole-grain Brown Mustard, 1 tsp.
  • Onion, 1 (peeled and halved, each half stuck with 1 whole clove)
  • Lean Salt Pork, ½ lb.
  • Cold Water, 6 cups
Preparation Soak the peas for at least 12 hours before you begin. Then, drain the peas and place them in a large saucepan. Add cold water along with the halved clove studded onions. Once you bring this mixture to a boil, reduce the heat to a medium setting. Then, add some salt pork. Cover the mixture and let it cook for a period of about 90 minutes. You would need to skim off any foam that rises to the surface area. Now, add the marjoram along with the thyme to the pan. Stir this mixture and let it simmer for at least 15 minutes. Add some salt as per your taste. Then, remove the pork and let it cool down so that you can cut it into pieces. You would need to remove the onion halves along with the cloves. Place the pork in a separate bowl. Serve it with the soup and grainy brown mustard. This recipe tastes great with hot bread. Pancake Ingredients
  • Eggs, 4 (separated)
  • Flour, 1 cup
  • Milk, 1 cup
  • Sour Cream, 3 tbsp.
  • Lingonberry Preserves, for garnish
  • Applesauce, for garnish
  • Salt, ½ tsp.
Preparation Beat the egg yolks till they thicken. Add flour, sugar, and salt. Add the mixture to the egg yolks alternately with some quantity of milk. Then, slowly stir in the sour cream. Beat the egg whites till they stiffen and fold them into the batter. Take a pancake pan and butter each depression in it. Then, pour about 1 tbsp. of the batter into each depression and ensure it spreads out evenly. Let it brown on one side. Once done, turn and let it brown on the other side. Serve it with applesauce and lingonberry preserve.
