  • Basil pesto sauce, 2 tbsp. (made separately by mixing basil leaves, kosher salt, olive oil and garlic cloves in a food processor)
  • Kosher salt, 2 tsp.

Here's how you go about concocting it. ♨ How to Make ♨ Begin by heating the olive oil over medium heat and then throwing in the onion bits into the hot oil. The beauty of this recipe is that you do not need to begin with puréeing tomatoes which is, let's face it, quite a messy affair. Just heat 2 tablespoons of olive oil and 1 tablespoon of butter in a relatively large frying pan and then toss in ½ a cup of chopped onions, a minced garlic clove and ¼ cup of finely hacked celery. Once the garlic becomes slightly brownish and the onion softens and becomes translucent, pour in an 8-oz. can of tomato sauce and a 6-oz. can of tomato paste. Use a spatula to mix all the ingredients, wait till it takes on a smooth texture and then add in a teaspoon each of fennel seeds, dry basil and dry oregano, 2 tablespoons of grated Parmesan cheese, ½ a teaspoon each of sugar and salt, a small bay leaf and ¼ teaspoon black pepper.   • Walnuts, 2 tbsp.
  • Garlic, 1 clove
  • Kosher or sea salt, to taste
  • Black pepper, a pinch (freshly craunched)
How to Make ♨ This paste can literally be made in three steps if you have a powerful mixer-grinder. You will not even need to cut of mince the basil, garlic and walnuts in that case. Just place all these three ingredients in the mixer along with the olive oil and grind on top speed until you have a grainy-looking smooth paste. Now, use a rubber spatula to scrape the paste off the mixing container and place it in a large glass bowl. Add the grated Parmesan to this paste and mix well with a ladle. Then add the ricotta and repeat until you are left with a uniformly mixed paste. Season with salt and pepper and voila! You pesto is ready to dress up your pizza crust!
3. White Pizza Sauce
Ingredients
  • Milk, 2 cups
  • Flour, ⅓ cup
  • Butter (or margarine), 1 tbsp.
  • Salt - ¾ tsp.
  • Onion powder, ⅛ tsp.
  • Paprika, ⅛ tsp.
  • Pepper, ⅛ tsp.
How to Make ♨ In a large glass bowl, pour in the flour and then add the onion powder, paprika, pepper and salt to it. Thoroughly commingle the contents to have a uniform mixture and then slowly pour in the milk.
