  • 1 tbsp. olive oil
  • 1 cup cheese (grated)
  • 1 large onion (finely chopped)
  • 1 packet (230 g) corn chips
  • 500 g beef (chopped)
  • ½ cup coriander leaves (chopped)
  • 1 can (300 g) kidney beans (drained; rinsed)
  • ¼ cup water
  • 1 tsp. Mexican chili powder
  • 2 tbsp. tomato paste
  • 1 packet (35 g) reduced salt taco seasoning mix
  • ½ cup tomato salsa, mashed avocado, and sour cream, to serve
Directions Preheat the oven to 350 °F. Pour a little oil in a nonstick frypan, and place it over medium heat. Sauté the onions in it for 2 minutes or until they turn translucent. Then, add the chopped beef to the pan, stir, and let it cook for 5 minutes or until it turns brown. Toss in the kidney beans, taco seasoning mix, chili powder, tomato paste, and water. Reduce the heat to medium-low, and let the mixture simmer for 5 minutes, or until you get a thick gravy. Toss in the coriander and remove the pan from the heat. Place the corn chips on a heat proof plate, and spoon the prepared beef mixture onto them. Sprinkle the cheese over the chips, and bake them for 15 minutes in the oven. Once done, layer the chips with salsa, avocado, and sour cream, and serve. Cheese Nacho Recipe Ingredients
  • 1 can refried beans
  • 1 tomato (diced)
  • 1 large bag white corn tortilla chips
  • 1 cup green onion (chopped)
  • 1 medium-sized onion (chopped)
  • 1 cup sour cream
  • 1 cup pepper jack (shredded)
  • 1 cup cheddar (shredded)
  • 2 jalapenos (sliced crosswise)
  • 1 can chilies
Directions Preheat the oven to 350 °F. Cook the refried beans in a small saucepan over low heat, until they turn loose. Spread the tortilla chips on a large, oven-friendly platter, and pour the refried beans over them. Then, sprinkle the chips with the onions, jack cheese, and slices of 1 jalapeno. Add a layer of chili and then of cheddar to the chips. You can keep adding these layers until all the ingredients get used. Transfer the platter to the oven, and bake until the cheese melts (for about 5-10 minutes). Add the sour cream, green onions, tomato, and the remaining jalapeno slices to the nachos, and serve.   • 1 can (4 oz.) green chilies (chopped)
  • ½ cup onion (chopped)
  • ½ cup tomato (chopped)
  • 2 tbsp. butter
  • 1 cup (4 oz.) Monterey Jack cheese (shredded)
  • 2 tbsp. all-purpose flour
  • 1½ cups Velveeta cheese (cubed)
  • ½ cup milk
  • Tortilla chips
Directions Mix together the chilies, onion, and butter in a 1½ qt. microwave-safe dish. Cover it and microwave on high for 45 seconds. Take the dish out of the microwave and stir in the flour until the mixture turns smooth. Next, stir in the milk. Microwave on high for 30-60 seconds or until the mixture thickens, this time uncovered. Mix in the cheeses and tomato. Place the dish back in the microwave and cook uncovered for 1-2 minutes or until the cheese has melted. Serve the dip with tortilla chips.
