1. Red Beans and Rice
Ingredients
- Rice, 2 cups
- Onions, 1 cup (chopped)
- Green Pepper, ½ cup (chopped)

- Red kidney beans, 1½ cups (soaked)
- Water, 2¼ cups
- Oregano or curry leaves, 2 or 3

Method
Heat a little vegetable oil in a frypan, and add the onion, pepper, and garlic to it. Fry briefly over high heat until tender. Add the kidney beans, 1 cup of water, oregano leaves, vinegar, soya sauce, and salt. Bring it to a boil, and then simmer until done. Alongside boil the remaining 1¼ cups water in a saucepan and cook the rice for about 10 minutes. When both rice and beans are cooked, mix them and serve.

Ingredients
- Water, 1½ cups
- Rice, 1 cup
- Coconut (grated), ½ cup
- Ginger, 2 teaspoons (crushed)
- Butter, 1 tablespoon
- Mango chutney, 2 tablespoons

Method
Heat the water, rice, coconut, ginger, butter, salt, and mango chutney in a frypan, and bring the mixture to a boil. Stir, cover, reduce the heat, and simmer for around 20 minutes or until well-cooked.
