  • Peanut oil, one cup
  • Pork sausage, 3 pounds
  • Chopped onions, 1 cup
  • Drained, chopped sauerkraut, 4 pounds
  • Dry bread crumbs,1/2 cup plain
  • Neufchatel cheese, 2- 8 oz packages
  • Parsley, 3 tablespoons
  • Dry mustard, 2 teaspoon
  • Garlic powder, 1 teaspoon
  • Tony chachere's creole seasoning,1 teaspoon
  • Flour, 1 cup
  • Skim milk, 1 cup
  • Black pepper to taste
Coating
  • Flour, 2 1/2 cups
  • Bread crumbs, 2 1/2 cups
  • 4 eggs beaten with a 2 tbs. water
Directions
  • In a skillet brown the sausages and the onions and drain out the oil.
  • Next add all the ingredients and stir the mixture well. It has to form a lump of meat.
  • Once cooked, remove and refrigerate it, until it cools down.
  • Then, make small balls out of the meat lump.
  • Place them in the flour and apply a coat of beaten up eggs. Coat these with bread crumbs and then fry them until they turn brown.
  • Once you are done with frying, remove then onto a tissue paper so that the oil is soaked out.
  • Finally, serve this party appetizer with some cold mayonnaise dip to cool the piping hot dish.
Apfelmus Ingredients
  • Apples, peeled, cored and chopped into chunks -- 3 or 4 pounds
  • Water, 1 cup
  • Sugar, 3/4 cup, or to taste
  • Lemon juice, 1 tablespoon
  • Cinnamon, 1/2 teaspoon
  • Salt, 1/4 teaspoon
Directions
  • Mix all the ingredients in one pan and bring them to boil till the apples begin to fall apart. Keep the mixture on simmer to prevent it from burning.
  • Once done remove it from heat and allow the mixture to reach room temperature.
  • Then put it in a masher and blend it well for a smooth effect.

  • Shredded cabbage, red or green, 1 bowl
