Onion, Bacon and Cheese Stuffed Buns Ingredients For Dough:
  • Water, ¾ cup
  • Milk, ½ cup
  • Butter, ¼ cup
  • Honey, ¼ cup
  • Egg, 1 (beaten)
  • Flour, 3½ - 4 cups
  • Instant Yeast, 4 tsp.
  • Salt, 1¼ tsp.
For the Filling:
  • Butter, ½ cup
  • Green Onion, ⅓ cup
  • White/Yellow Onion, ⅓ cup
  • Garlic, 1 tbsp. (minced)
  • Bacon, ⅔ cup (cooked, crispy, chopped)
  • Gruyere Cheese, 2½ cups
Method First, we make the dough. For that, heat the water and milk in a saucepan until the butter melts (do not boil). Pour the concoction into a bowl and let it cool. Add some honey and 1½ cups of flour; mix until smooth (lumps can ruin your bread). Add egg and yeast and mix until smooth. Let it sit for 15 minutes, uncovered. When the time is up, add salt and 1 cup of flour. Slowly, pour the dough onto a flour-covered surface. Add the remaining flour until it is no longer sticky. Knead it for about 8 - 10 minutes. Place it in a greased bowl, cover it, and let it rise in warm place for about an hour. While the dough is rising, melt the butter for the filling in a saucepan. Add garlic and saute it for a little while. Cook the onions until they are tender and transparent. Add the bacon and stir it until ready. Set it aside to cool. After the dough has risen, pour it onto a floured surface. Punch it down into a small rectangle and roll it out to a 12×24 inch rectangle. Pour the filling evenly onto the dough, leaving about ½ inch around all edges. Sprinkle half of the cheese on top of the filling. Fold ½ inch of the dough on the edges. Roll the dough lengthwise into a Swiss roll. Close the seam by pinching it with your fingers. Cut the Swiss roll into 16 pieces. Place each piece into a lightly greased tin. Cover the pieces with a towel and let them rise for another hour. When they have doubled in size, sprinkle the remaining cheese on their top, and bake them at 350° F for 15 - 20 minutes. They will need to be left in the tin for 5 minutes. Get them out to cool, preferably on a wire rack, and serve.
