  • Broccoli florets, 12 oz. (in 1-inch pieces)
  • Mushrooms, 8 oz. (sliced)
  • Water, 1½ cup
  • Onion, 1½ cup (chopped)
  • Yellow squash, 1¼ cups (thinly-sliced and halved)
  • Tomatoes, 1¼ cup (crushed in purée)
  • Carrots, ¾ cup (julienne)
  • Parmesan cheese, ½ cup (grated)
  • Oil-pack sun-dried tomatoes, ¼ cup (ground)
  • Butter, ¼ lb.
  • Beef bouillon granules, 1 tbsp.

Directions In an oven, melt the butter over medium heat and sauté onions, carrots, and broccoli for 5 minutes. Add mushrooms, squash, and garlic and sauté for another 2-3 minutes. Directions In a pan, sauté the shallot and garlic in the olive oil over medium heat. Allow it to cool and add all meatball ingredients and mix well. Scoop into 2 oz. meatballs. Now place the meatballs on a sheet pan. In a preheated oven, bake the meatballs for 20-25 minutes at 350° F. Remove from the oven once done. To keep them warm, cover the meatballs with a foil. In a saucepan, melt the butter over high heat and add heavy cream. When the cream starts to boil and turn thick, turn off the heat.
