  • 3 medium-sized zucchini
  • 30 baby spinach leaves
  • 5 tbsp whipper chive cream cheese
  • 15 basil leaves
Preparation...
While you get the zucchini ready, preheat the oven to 450º Fahrenheit. Spray non-stick cooking spray on a cooking sheet and place thin zucchini strips on the sheet. Sprinkle salt and pepper on zucchini strips and spray a little cooking spray on the zucchini. Roast the strips in the oven for 30 to 35 minutes Now on each of the zucchini strips place 2 spinach leaves and one basil leaf with a small drop of cream cheese. Roll the zucchini strips into a roll and place them in the refrigerator for at least 20 to 25 minutes before serving. Enjoy a cool appetizer.
Shrimp and Avocado Appetizer
This is one of the easiest to make appetizer recipes. The flavors of shrimp along with the mayo and avocado gives it a buttery texture and taste.

  • 8 oz deveined, peeled and cooked shrimp
  • ½ medium avocado, cut into 24 slices
  • ½ large cucumber, de-seeded and cut into 24 slices
  • 2 tbsp radish grated
  • ¼ cup mint leaves
  • ¼ cup low calorie mayonnaise
  • 1 tsp wasabi paste
  • ½ tsp soy sauce

In a mixing bowl, combine mayonnaise, wasabi paste and soy sauce until a thick and smooth paste is formed. Place cucumber slices on a dish and spread a small dollop of mayonnaise mixture on the cucumber slices. Now place avocado slices on the cucumber slices and then shrimp. Top the shrimp with grated radish and mint leaves. Place in the refrigerator for 10 minutes before you serve the appetizer.
Chicken Enchilada Soup
Here is an interesting Weight Watchers soup recipe. Personally I am very fond of this soup recipe and make it very often, as it makes for a perfect appetizer cum meal recipe for me.
Ingredients Required...
  • 1 pound skinless and boneless chicken breast
  • 4 cups chicken broth
  • 1 can enchilada sauce
  • 4 oz low fat cheese
  • 1 can kidney beans, drained
  • 1 cup polenta
  • 1 garlic clove, minced
  • ½ cup chopped onion
  • 1 tsp chili powder
  • oil 1 tsp
  • salt as per taste
  • 3 cups water
Preparation...
Boil chicken breast in a pot and keep it aside. In another pot, heat oil and sauté onions and garlic over low heat, till the onions are translucent. Then add chicken broth and bring it to a boil. In a mixing bowl, combine 2 cups of water with polenta and whisk, till well blended. Add the polenta mixture to the chicken broth mixture, along with remaining water, kidney beans, enchilada sauce, chili powder and salt. Bring the mixture to a boil. In the meantime, shred boiled chicken into small bite size pieces and add it to the broth mixture. Let the soup simmer for half an hour to 45 minutes over low heat, till it thickens. At last add grated cheese to the soup and continue to stir, till cheese melts and serve hot.
Basil Cheese Triangles
If you are in mood for some 'cheesy' appetizers, here is the recipe for you. Although it will take some time to bake it is no doubt worth the wait.
Ingredients Required...
  • 1 pound low fat shredded feta cheese
  • 16 ounces phyllo dough, at room temperature
  • 2 eggs beaten
  • ⅓ cup low fat butter
  • ¼ cup basil leaves, chopped
  • ¼ tsp white pepper
Preparation...
Mash cheese in a mixing bowl, add beaten eggs, basil leaves and white pepper and mix well. Cut the dough sheets into 2 inch strips. Place the strips in a damp cloth, so that the strips do not dry off. Place the cheese mixture about 1 teaspoon at one end of the strip and fold the strip into triangular shape. Once all the triangles are ready, place them on a greased cookie sheet. Brush the triangles with butter and bake them in preheated oven at 400º Fahrenheit for about 12 to 15 minutes, till they are puffed and golden in color. Serve them warm.
