- 4 potatoes (peeled, boiled, and cubed)
- 2 cups, sausage (cooked; diced)
- 4 tablespoons, gherkins (chopped)
- 4 tablespoons, onions (chopped)
- 4 tablespoons, butter
- ½ cup, mayonnaise
- Salt and freshly ground pepper to taste
- In a large, heavy based pan, melt the butter. Add the chopped onions and sauté till they turn transparent.
- Add the potatoes and toss till they turn golden brown; to this, add the sausages and toss well. Take the pan off the heat, add the gherkins, and mix well.
- Put the mixture into a bowl and cool slightly till they are warm.
- Add the mayonnaise and mix, ensuring that it coats all the ingredients. Season with salt and pepper. Serve immediately.
- 1 cup, butter or margarine
- 2⅓ cups, sugar
- 4 eggs
- 1 cup, milk
- 2 teaspoons, vanilla extract
- 3 cups, all-purpose flour
- 3 teaspoons, baking powder
- 1 teaspoon, salt
- 2 tablespoons, cinnamon (ground)
- Preheat the oven to 350 °F. Grease and flour a 10-inch tube pan.
- In a large mixing bowl, cream the butter and 2 cups sugar until they turn light and fluffy. Add the eggs and beat the mixture again.
- In another bowl, mix together the milk and vanilla. Sift the flour, baking powder, and salt together, and add it to the egg-butter-sugar mixture. Pour the milk and blend all the ingredients well.
- Combine the remaining sugar with the cinnamon powder. Sprinkle 2 tablespoons of the sugar-cinnamon mixture onto the greased baking pan.
- Pour ⅓ of the batter into the pan. Then, top it with half the cinnamon sugar mixture. Top with another one-third of the batter and again the sugar mixture. Finally, pour the remaining third of the batter. Smooth the top, adding any scrapings to the sides, not the middle.
- Bake in the center of the oven for 1 hour, or until an inserted toothpick comes out clean. Remove from the oven, cool on a wire rack. Serve with fresh cream.
- 4 eggs (separate)
- ½ cup, milk
- ½ cup, white sugar
- 1 cup, all-purpose flour
- ⅓ cup, raisins
- 1 tablespoon, butter
- 2 tablespoons, icing sugar
- 2 cups, applesauce
- Beat the egg whites in a bowl until they form soft peaks. The tips should flop over when you lift your whisk.
- In a separate bowl, beat the yolks until smooth, add the milk, sugar, salt, flour, and raisins to it. Gently fold in the egg whites.
- Melt the butter in a skillet. Pour the batter into the skillet and cook till golden brown. Then flip and cook on the other side until set.
- Tear into uneven pieces with a fork, and continue cooking for a further 2 minutes.
- Serve warm, sprinkled with icing sugar and apple sauce.
