  • Basil, 1½ tablespoons
  • 10 onions, chopped coarsely
  • Sugar, 4 ounces
  • Italian seasoning, 3 teaspoons
  • Oregano, 3 teaspoons
  • 1 green pepper, chopped coarsely
  • Bay leaves, 5
  • Mushrooms, sliced, 32 ounces
  • Red pepper, crushed, ⅛ teaspoon
  • Salt, 2 tablespoons
  • Tomato paste, 18 ounces
  • Large garlic cloves, pressed, 2
  • Celery stalks, chopped coarsely, 3
Procedure: In a blender, take tomatoes, half of the chopped onion, green pepper, and celery. Blend all the ingredients till you achieve the desired chunkiness. For instance, if you want to have some of the pieces in your sauce, you do not have to blend much. On the other hand, if you want a smooth sauce, you will have to blend the ingredients for a long time. Take these blended vegetables in a large pot and cook on a medium to low heat. Put in the tomato paste, spices, remaining onions, and mushrooms in the pot and cook for at least 2-3 hours,according to the consistency you need. Once this is done, remove the bay leaves.   • Italian style diced tomatoes, undrained, 1 can
  • Heavy cream, 4 ounces
  • White sugar, ¾ teaspoon
  • Onion, diced
  • Salt, ¼ teaspoon
  • Butter, 3 teaspoons
  • Olive oil, 2 tablespoons
  • Dried basil leaves, 3 teaspoons
  • Ground black pepper, ⅛ teaspoon
  • Dried oregano, ¼ teaspoon

Procedure: Heat olive oil in a large skillet and fry onion and garlic in it. Stir on medium to low flame so that it doesn't burn.
