Sweet Potato Recipes
Ribs, chicken, sausages, and marshmallows, all can be added to sweet potatoes. However, you need to know how many to add exactly, and how. This article will give you information about some unique recipes.
- Whole Sweet Potatoes, 20 oz. (halved in length)
- Brown Sugar, 1¼ cups
- Cornstarch, 2½ tsp.
- Salt, to taste
- Cinnamon Powder, ¼ tsp.
- Orange Rind, 1 tsp. (shredded)
- Apricots, 12 oz. (halved)
- Butter, 2 tbsp.
- Pecans, ½ cup (halved)
- Take the potatoes and place them in a buttered baking dish of 11x7 inches.
- In a pan put brown sugar, cornstarch, salt, cinnamon, and the orange rind. Take the apricots and drain them leaving the syrup. Add this apricot syrup to the mixture in the pan.
- Cook continuously and stir while the pan is on medium heat. Let the mixture come to a boil after 2 minutes.
- Now add the apricots, butter, and pecans. Pour this mixture on the potatoes in the baking dish.
- Bake leaving uncovered at 375° F, for 25 to 30 minutes.
- Sweet Potatoes, 3 cups (cooked and diced)
- Butter, 2 tbsp.
- Warm Milk, ½ cup
- Salt, ½ tsp.
- Marshmallows, for garnishing (miniature variety)
- Peanuts, ½ cup (chopped)
- Take a pan and blend butter, milk, and salt in it.
- Blend the potatoes and beat the mixture till it becomes light and fluffy.
- Keep adding more milk, as and when required.
- Pile these potatoes into a buttered casserole dish.
- Preheat the oven to 375° F and bake the casserole for 20 minutes.
- Take out the dish from the oven and garnish it with marshmallows and chopped peanuts. Then put the dish back into the oven and bake till the marshmallows become golden brown.
- Pineapple, 20 oz. (chunks in juice)
- Sweet Potatoes, 18 oz. (cut into 1" thick slices)
- Smoked Sausages, 16 oz. (sliced)
- Brown Sugar, 3 tbsp.
- Cornstarch, 2 tbsp.
- Salt, to taste
- Butter, 1 tbsp.
- Mix pineapple juice and water to make about a cup and half of mixture.
- Now take the pineapple chunks, potatoes, sausages, and arrange them in a well greased shallow baking dish.
- Now take a small pan and place it over low heat. Then add brown sugar, cornstarch, and salt to the pan. Slowly while stirring, add the pineapple juice and water mixture.
- Cook this mixture constantly till it thickens and boils. This should take a couple of minutes.
- Remove the pan from the heat and add the butter. Stir to mix properly.
- Pour this mixture over the sausages and potatoes in the casserole.
- Cover the dish and bake at 350° F, for 40 minutes.
- Chicken, 4 lbs. (pieces)
- Vegetable Oil, ¼ cup
- Dry Vermouth, ¼ cup
- Salt, 1½ tsp.
- Pepper, ¼ tsp.
- Cinnamon, ¼ tsp. (ground)
- Brown Sugar, 1 tbsp.
- Tart Apples, 2 (cored and cut in wedges)
- Sweet Potatoes, 3 (cooked and sliced)
- Take a skillet and heat the vegetable oil in it. Add the chicken pieces and let them brown. Once the chicken is cooked, drain off the oil leaving just 1 tbsp.
- Take a mixing bowl and add dry vermouth, salt, pepper, cinnamon, and brown sugar. Mix them well.
- Add this mixture to the chicken in the skillet along with the apple wedges.
- Cover the chicken once it has been basted and let it cook on low heat for 25 minutes.
- Add the potatoes to the chicken and baste again using a cooking liquid.
- Cover and let it simmer till it is ready to be served.
- Pork Ribs, 2 lbs. (boneless)
- Sweet Potatoes, 3 (peeled and cut in pieces)
- Apple Cider, 2 cups
- Cider Vinegar, ¼ cups
- Worcestershire Sauce, ¼ cup
- Brown Sugar, ¼ cup
- Mustard, 2 tbsp. (bold and spicy)
- Apples, 2 (cored and cut in chunks)
- Oil, 1 tbsp.
- Cornstarch, 2 tbsp.
- Water, 2 cups
- Take a 6 qt. kettle and heat oil in it on a high flame. Cook the ribs in it for 10 minutes, till they get well-browned from all sides. Drain all the fat.
- Add potatoes to the ribs. Then, add apple juice, cider vinegar, Worcestershire sauce, sugar, and mustard in a mixing bowl and blend well.
- Put this mixture over the ribs and mix it well. Bring it to a boil and then reduce the heat to low.
- Cover the dish and let it simmer for 45 minutes or till the ribs become tender. Then add the apples and let them cook completely.
- Transfer the ribs, potatoes, and apples to a platter and keep the dish warm by covering it with an aluminum foil.
- Now for the liquid that's there in the dish. Add cornstarch to the water and then add the liquid. Bring it to a boil while stirring continuously and let it thicken.
- Then add this liquid to the platter of ribs, potatoes, and apples.
