Dishes to Prepare
Dependig on your taste preference and number of people you're cooking for, add or subtract the amount of ingredients mentioned in the following recipes. Ancho Chili and Cinnamon Truffles
Ingredients
  • Valrhona dark bitter chocolate, 2 lb.
  • Valrhona cocoa powder, 4 cups
  • Heavy cream, 3 cups
  • Ancho chili, ground, 2 tablespoons
  • Cinnamon, ground, 2 tablespoons
  • Ancho powder, 1 tablespoon
  • Cayenne pepper, 2 teaspoons
  • Kosher salt, 1 teaspoon
Directions In a large pan, combine the ground Ancho chili, cayenne pepper, Kosher salt, and heavy cream. Boil the ingredients with a cover on top and steep for at least 2 hours. Take a bowl and chop the Valrhona dark bitter chocolate into small 1 inch pieces. Add the chopped chocolate pieces to the cream mixture in the pan. Mix everything properly till there are no lumps remaining. If there are any lumps, you can make the mixture smooth over a double boiler. Now take a 2 inch pan and place parchment paper over it. Pour the mixture on top of the parchment paper and place in the refrigerator till it sets. Once the chocolate-spicy-cream mixture has set, take a small spoon and scoop out as many ganache balls as you can. Take each scoop between your hands and roll them into smooth balls. In a small bow, mix cocoa powder and Ancho chili powder together. Roll the ganache balls in the mixture, and place on a platter to serve. Chocolate, Strawberry, and Banana Burritos
Ingredients
  • Flour tortillas, 8", 6
  • Egg, 1
  • Semi-sweet chocolate chips, 1 cup
  • Bananas, mashed, 1 cup
  • Strawberries, cut, 1 cup
  • Sugar, ½ cup
  • Semi-sweet chocolate chips, ½ cup
  • Unsweetened cocoa powder, ¼ cup
  • Butter or margarine, softened, ¼ cup
  • All-purpose flour, ¾ cup
  • Canola oil, 1 tablespoon
  • Baking powder, ½ teaspoon
  • Baking soda, ½ teaspoon
  • Vanilla, ½ teaspoon
  • Salt, ¼ teaspoon
Glaze
  • Butter, 2 tablespoons
  • Powdered sugar
Directions As the second choice for chocolate desserts, let's make delicious chocolate banana burritos. Preheat the oven at 350ºF. In a large bowl, beat sugar and butter together on medium speed till it turns creamy. Add the bananas, egg, and vanilla in the bowl. Keep beating and scraping the bowl from the side often. Once the ingredients are mixed completely, reduce the speed to low and add the flour, baking powder, baking soda, salt, and oil in the bowl. Mix everything properly. On a plate, place a tortilla and spread some of the ready batter on top of it. Top with chocolate chips and strawberries, and roll the burrito to place on a greased baking dish. Finish making all the tortillas into burritos. To make the glaze, over low heat, place a pan and melt the chocolate chips, butter, and cocoa powder. Keep stirring it occasionally so nothing sticks to the pan. Once the burritos are ready, drizzle the glaze on top. Place the baking dish in the oven, and bake for about 20 to 25 minutes till the burritos turn golden brown. Sprinkle powdered sugar on top, and serve hot. Churros
Ingredients
  • Sifted flour, 9 oz.
  • Water, 17 fl. oz.
  • Salt, 1 teaspoon
  • Oil, for frying
  • Sugar, for drizzling

Directions If you wish to prepare an easy to make desserts, you should start with making churros. In a pot, add salt to water and boil properly. Pour the sifted flour in the pot and mix properly with a wooden spoon or spatula. Once the dough is ready, remove the pot from the heat and keep mixing with the spoon till the dough is of proper consistency. As the dough turns smooth, fill the churrera (a large tin or brass syringe which has many nozzles and handles to hold it properly as you are pressing the dough through it) with the dough. Take a frying pan, heat the oil to 375ºF and press the strips of dough from the churrera. Keep pressing them out, as many as you can fit in the pan and as long as you want. Cook for about 3 to 4 minutes till they turn golden. Take the churros out and drain them on some paper towels. Sprinkle the churros with sugar and serve with hot chocolate immediately. Chongos Zamoranos Ingredients
  • Whole milk, 8 cups
  • Sugar, 1 cup
  • Cornstarch, 1 teaspoon
  • Cinnamon sticks, 4
  • Lime juice, 2
Directions Chongos zamoranos is one of the traditional desserts made with milk, cinnamon, lime, sugar, and cornstarch. In a large pan, heat the whole milk over low heat to make it hot, not boil. Add the cornstarch and dissolve it completely. Cook the milk for about 30 minutes and then add the lime juice. Once the milk thickens, place the cinnamon sticks on the side of the pan so that it only dips in. Pour the sugar in and stir with the cinnamon sticks. Let the mixture cook for about 2 hours. As the mixture turns firm, remove from the heat. Make sure that throughout cooking, you don't boil the milk. Scoop the chongos zamoranos in individual glass bowls and serve it.
