Spaghetti squash is a seed-bearing oblong fruit that comes in different types of colors and sizes. The flesh of the fruit is solid when it's raw. However, once cooked, the flesh will easily fall off and what will remain inside are strands that look like spaghetti. This fruit has nutrients like Vitamin A and beta carotene, and is also low in calories (1 cup = 42 calories). You can boil, bake, steam, and microwave the fruit, and can be served as a substitute of pasta.

Ingredients
  • Red peppers, 12
  • Spaghetti squash, 1
  • Bay leaf, 1
  • Minced garlic clove, 1
  • Chopped onion, ½
  • Chopped mushrooms, 1 cup
  • Chopped green pepper, 1 cup
  • Vinegar, ½ tsp.
  • Salt and black pepper, for taste
  • Italian seasoning, for taste
Cook red peppers over a medium-high grill till it turns soft. Use tongs to remove the peppers off the grill, and remove the skin. Place the peppers inside a food processor, and blend until you get a smooth purée. Now take a skillet and pour some oil in it. Add mushrooms, onions, green peppers, bay leaf, and garlic till all the ingredients turn soft. Add the red pepper purée, vinegar, and spices to your liking. Cover the skillet and let the ingredients cook for a few minutes over low heat. Once cooked, remove the bay leaf. Cut the squash in half and take the seeds out. In a pot, place enough water to submerge at least half of the squash. Keep the heat at medium to low heat, place a cover on top, and let the squash cook for about 20 minutes. When the squash is cooked, use a fork to remove spaghetti-shaped strands out of the fruit. Combine the sauce we made earlier, and serve with some grilled vegetables or barbecue chicken. Ingredients
  • Spaghetti squash, halved lengthwise and seeded, 3 lbs.
  • Grated Parmesan cheese, ¼ cup
  • Bread slice cubes, 3
  • Sour cream, ¾ cup
  • Sliced mushrooms, 1 can
  • Chopped onion, 1
  • Vegetable oil, 1 tbsp.
Preheat the oven at 400ºF and cook the squash for 35―40 minutes on a baking sheet. Once baked, shred the strands out and place it at the bottom of a greased casserole dish. Take a pan and add 1 tbsp. of oil in it. Cook onions, mushrooms, and basil till the mushrooms turn soft. Stir in sour cream, and combine thoroughly. Pour this mixture over the squash, along with generous amounts of Parmesan cheese. Add a layer of bread cubes to cover the cheese. Keep the dish inside the oven and bake for about 15―20 minutes, or until the bread cubes turn golden brown. Stuffed Spaghetti Squash
Ingredients
  • Spaghetti squash, 1
  • Ground beef, 1 lb.
  • Chunky spaghetti sauce, 1 jar
  • Grated Parmesan, Cheddar, and Monterey Jack cheese, 1 cup
  • Chopped bell peppers, ½ cup
  • Chopped carrot, ½
  • Chopped onion, ½
Cut the squash in half and remove the seeds. Place the squash in a pot halfway filled with water to cook it. Cover the pot and let it cook for about 20 minutes. With a fork, remove the strands and place it in a bowl; don't throw away the shell as we will serve the stuffed squash in it. Pour the spaghetti sauce into a pan and add chopped onions, bell pepper, and carrot. Cook the mixture for 10―12 minutes. Once ready, stuff the squash with the sauce and sprinkle generous amounts of all the three cheeses. Place the squash in a 350ºF preheat oven, and bake for 10 minutes so that cheese melts. When the cheese starts to bubble and turns golden brown on top, remove the squash out of the oven, and serve immediately.
