Baked Potato Wedges

One of the best accompaniment to a meal is baked potato wedges. These are healthier than deep-fried potato wedges and they are more tasty too.

Potatoes have always garnered a bad reputation as being carbohydrate rich food that makes one gain weight. But the truth is that there is nothing more satisfying than biting into a piece of succulent and perfectly seasoned potato wedge. Whether it is deep-fried potato wedges sprinkled with salt and pepper or a sweeter version made by baking them in an oven and smothering them with honey and sesame seeds, there is nothing to beat its incredible taste. Potato wedges are even loved by hardcore vegetable haters and there are many ways to make them. These are a healthier version of deep-fried ones which are a dieter's nightmare. You can have them as it is or serve them with battered or crumbed fish fillets. Oven-baked potato wedges are very simple to prepare. And let's face it, when you are cooking a dinner after a long time at work, you need a side dish that does not require too much of efforts to prepare. Herbed Baked Potato Wedges Ingredients
  • 6 large Russet potatoes
  • 4 cloves garlic, minced
  • 5 tablespoons olive oil
  • Salt, to taste
  • 2 tablespoons balsamic vinegar
  • ½ teaspoon cayenne pepper
  • 4 tablespoons fresh flat leaf parsley, minced
  • 1 teaspoon paprika
Method Wash the potatoes in water and scrub them to remove any dirt and debris. Cut them into wedges (8 wedges, per potato) and place them in a large bowl. Add 4 tablespoons of olive oil, minced garlic, balsamic vinegar, cayenne pepper, paprika and salt. Now toss the potatoes in the bowl, making sure that the potato wedges are evenly coated with all the condiments. Now arrange the potato wedges in a single layer in a roasting tin and bake them in a 450 ºF oven for 15 - 20 minutes until they turn golden brown. When the potato wedges are done, remove them from oven, transfer to a platter and sprinkle with minced parsley. Honey and Sesame Potato Wedges Things required
  • 4 large Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 3 tablespoons organic honey
  • 2 teaspoons toasted sesame seeds
  • 1 tablespoon salt
Method To make this delicious sesame encrusted potato wedges, first wash and scrub the potatoes. Cut them into medium-sized wedges and place them on a platter. Next grease a baking tray with a tablespoon of olive oil. Place the potato wedges in a single layer on the greased baking tray. Now drizzle it with the rest of the olive oil and sprinkle with salt. Bake them in a 450 ºF oven for 10 - 12 minutes until the wedges start to become a light golden brown in color. Remove baking tray from the oven and drizzle the potato wedges with organic honey. Bake in the oven for another 4 - 5 minutes until the honey caramelizes and the potato wedges turn a rich golden brown. Remove wedges from the oven, transfer to a platter and sprinkle them with toasted sesame seeds. Baked Potato Wedges with Cheese Things required
  • 4 large Russet potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese
  • ½ teaspoon dried thyme
  • 2 gloves garlic, grated
Method Cut the potatoes into wedges after washing and scrubbing them. Place them in a single layer in a greased baking tray. Sprinkle them with salt, grated garlic cloves and dried thyme. Mix them thoroughly with your hand and bake them in a 400 ºF oven for 10 - 12 minutes. Remove the baking tray from the oven and sprinkle them with grated Parmesan cheese. Place the baking tray back inside the oven and bake them for another 2 - 3 minutes until the cheese is just melting. Take care not to leave them in the oven for too long or the cheese will burn.
