Shredded Chicken Sandwiches Ingredients
  • 2 12" loaves ciabatta bread, split and toasted
  • 2 1¾-2 lb purchased roasted chickens, skinned and shredded
  • 2 medium onions, cut into ¼"-thick slices
  • 1 8-oz. can tomato sauce
  • 1 cup chopped green or red sweet pepper
  • ⅔ cup cider vinegar or white wine
  • ¼ cup snipped fresh basil
  • ¼ cup honey
  • 1 tbsp. olive oil
  • 1 tsp. salt

Process Heat olive oil in a 4-quart Dutch oven over medium heat. Add sweet pepper and onion and cook for about 5 minutes while stirring frequently. Add vinegar, cook for 1 minute, and then add honey, tomato sauce, salt, and basil. When the mixture starts boiling, add chicken and toss gently to coat; cook until heated thoroughly. Place the chicken mixture under the bread loaves. Top it with slices of pickle. Cover the bread loaves with the remaining ones and cut into serving size portions.   • 2 chicken breasts
  • 1 small head lettuce, shredded
  • 1 clove garlic, minced
  • ½ bunch cilantro
  • 4 cups rice sticks (after frying)
  • ½ cup green onions, slivered lengthwise
  • ¼ cup chopped peanuts or slivered almonds
  • ¼ cup soy sauce
  • 1 tbsp. toasted sesame seeds
  • 1 tbsp. sherry
  • 4 tsp. sugar
  • 1 tsp. Hoisin sauce
For Dressing
  • 2 tbsp. red wine vinegar
  • 1 tbsp. sesame oil
  • 1 tbsp. oil
  • 2 tsp. hot mustard
  • 1 tsp. Hoisin sauce
  • ½ tsp. coarse salt
  • ½ tsp. salt
  • ½ tsp. sugar
Process For salad, preheat the oven to 350º. Marinate chicken in soy sauce, sherry, minced garlic, sugar and Hoisin sauce. Bake this marinated chicken in the preheated oven for about 35 - 40 minutes. When the chicken slightly cools, shred it and set aside. Meanwhile, slice onions also, cut off the stems of parsley, cut lettuce and place all three in a bowl. Add chicken to this bowl, mix well and set aside. Now, fry the rice sticks and place them on paper towels to drain. Now mix all the ingredients of dressing together and pour over the chicken mixture.   • 3 tbsp. brown sugar
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. soy sauce
  • 1 tbsp. apple cider vinegar
  • 1 tsp. crushed red pepper flakes
  • ½ tsp. garlic powder
