Corn can be used in a variety of ways to cook easy and delectable dishes at home. The scalloped corn dish was something I discovered at my friend's bash. Despite having very little time on hand, she had managed to whip up some amazing stuff to my surprise! Marveling at the beautiful spread she had prepared for this bash, she mentioned about her favorite scalloped corn recipes. I am sure these easy recipes will surely add more variety for your dinnertime. Recipe 1 Ingredients
  • Egg, 1
  • Salt and pepper to taste
  • Butter, 2 tablespoons
  • Half and half or milk and cream, ⅓ cup
  • Cream-style corn, 1 (15 ounce) can
  • Soda crackers (crushed), 24-30
  • Golden whole kernel corn (drained; reserve 3 tablespoons of the liquid), 1 (15 ounce) can
Preparation Beat the egg in a bowl until it turns frothy and add the salt and pepper to it as per your taste. Add the reserved liquid along with the corn. Now, add the butter along with some cream and cracker crumbs and mix this preparation well. Place this in a casserole and top it with the remaining crumbs. Add a dollop of butter over this. Bake the entire preparation at 350 °F for half an hour. Recipe 2 Ingredients
  • Creamed corn, 1 (15 ounce) can
  • Eggs, 2
  • Butter, ½ cup
  • White sugar, 2 tablespoons
  • Whole kernel corn, 1 (15.25 ounce) can
  • Sour cream, 1 (8 ounce) container
  • Corn muffin mix, 1 (8.5 ounce) package
Preparation Preheat the oven to 350 °F. Meanwhile, lightly grease a baking dish. Mix the eggs, sour cream, melted butter, corn, and sugar in a medium-sized bowl. Add the muffin mix to this as well. Pour this preparation into the baking dish. Bake it for 40 minutes, and serve. Recipe 3 Ingredients
  • Eggs, 2
  • Butter (melted), ½ cup
  • Creamed corn, 3 (15 ounce) cans
  • Saltine crackers (crushed), 1 cup
  • Paprika, ½ teaspoon
  • Ground black pepper, ¼ teaspoon
Preparation Lightly butter a casserole dish. Meanwhile, preheat the oven to 350 °F. Then, combine the following ingredients in a medium-sized bowl―eggs, creamed corn, ¼ cup of the butter, and ½ cup of the cracker crumbs. Pour this mixture into the prepared dish. Meanwhile, mix the remaining quantity of melted butter in a small bowl along with the remaining cracker crumbs, pepper, and paprika. Add this mixture as a topping over the casserole. Bake this preparation at 350 °F for at least 40 minutes. Recipe 4 Ingredients
  • Eggs (beaten), 2
  • Milk, ¼ cup
  • Saltine crackers, 20
  • Whole kernel corn, 1 can
  • Creamed corn, 1 can
  • Salt and pepper to taste
Ingredients for the Topping
  • Saltines, 20-25
  • Butter (divided into 1 tablespoon pieces), 4 tablespoons
Preparation Beat the eggs in a medium-sized bowl and add both the cans of corn to it. You also need to preheat the oven to 375 °F. Then, crumble some crackers into the corn, and add a pinch of salt and pepper to this. Add in the milk, and stir the preparation so that it blends well. Crumble some more crackers, and use them as a topping. Ensure that they cover the corn completely. Place the 4 pieces of butter on different areas of the topping. Bake this preparation at 375 °F for at least 40 minutes, and serve.
