Potatoes and parsley is a classic pairing that is enjoyed by one and all. Here are some simple and easy recipes.

A combination of parsley and potatoes can be a culinary delight. Parsley potatoes is ideal as a vegetable side dish, and can be made without much efforts. It can be prepared in different ways, some of which are given below. Boiled Version: It takes around 15 to 20 minutes to prepare this recipe. Get two pounds of small, red potatoes, and rinse them well. Once done, cut them in half (lengthwise), and put the pieces in a saucepan. Add some water and a teaspoon of salt. Make sure that the water covers the potatoes in the sauce pan. Place the pan over high heat, and as the water boils, simmer and cook the potatoes uncovered, for around ten minutes. When the potatoes become tender, remove the saucepan from heat, and transfer the pieces to a colander. Once the water drains out completely, transfer the boiled potatoes to a cooking pot, and add around ⅓ cup of finely chopped parsley leaves, along with three tablespoons of butter (or olive oil) and ¾ teaspoon of salt. You may also add a small amount of black pepper powder. Combine the contents well before serving. As per this recipe, you can prepare around four to five servings of parsley potatoes. Baked Version: In order to prepare this recipe, you need three to four large potatoes. Rinse them well, and cut into cubes along with the skin. Sprinkle one teaspoon each of pepper and salt, and a tablespoon of parsley flakes over the potato pieces. Add a small amount of olive oil, so as to coat the pieces. Combine the ingredients well, before placing the potato pieces on a cookie sheet. Once done, bake the potatoes for around 25 to 30 minutes in the oven that is preheated to 350° F. You can also prepare baked potatoes in a different way. As per this recipe, Prepare boiled potatoes as per the first recipe, and transfer the dish to an oven-safe dish. Bake for around 20 minutes in the oven that is preheated to 350° F. Method III: The ingredients of this recipe include five to six medium-sized potatoes, two tablespoons of butter, two tablespoons of finely chopped fresh parsley leaves, one teaspoon paprika, and salt and ground pepper as per your taste. Rinse and peel the potatoes. Cut each potato into four pieces, and boil them in a saucepan, until the pieces get tender. Drain the potato pieces in a colander. Take a baking dish, and add butter into it. Place the dish in an oven that is preheated to 350° F. As the butter melts, remove the dish from the oven, and add salt, pepper, and paprika to the melted butter. The next step is to add the boiled potato pieces one by one, so that the pieces can be coated well with melted butter. Place the dish again in the oven, and bake for at least 20 minutes. Take out the dish, and sprinkle the chopped parsley. Now, bake the potatoes for another five to six minutes. Your oven-baked potatoes with parsley and butter is ready.
