Red potatoes are small and round in shape, red from outside and white from inside. They are low in starch and used in a variety of colorful recipes. Red potatoes can be boiled, baked, grilled, or fried. They easily absorb the flavor of the spices added to the recipe. Oven roasted red potatoes are crispy from outside and soft from inside. You can serve them for dinner or have them as snacks. Using Baby Red Potatoes Ingredients
  • Basil, 1 tbsp.
  • Olive oil, ½ cup
  • Parmesan cheese, 1 cup (grated)
  • Seasoned salt, 2 tsp.
  • Thyme, 1 tbsp.
  • Baby red potatoes, 2 lb.
  • Pepper to taste
Procedure First preheat the oven to 425°F. Wash and cut the red potatoes into small cubes of 1 inch each. Then, place the potato cubes in the baking pan and sprinkle the olive oil to coat the red potato cubes. Add basil, red pepper, salt, and thyme and toss the potatoes properly. Add half of the grated Parmesan cheese on the potatoes and place the mixture in the preheated oven for 30 minutes. Then take out the baking pan, check whether the potatoes are dry. If yes, add some more olive oil. Then, add the remaining grated Parmesan cheese and place the baking pan again into the oven for 30 more minutes. Let the mixture cool for sometime before serving.   • Garlic, 2 tsp. (dried, minced)
  • Red potatoes, 8 to 10 medium
  • Olive oil, 3 tbsp.
  • Dried parsley, 2 tsp.
  • Salt and pepper to taste
Procedure Wash and cut the red potatoes into small cubes or quarters. Preheat the oven to 350°F. Take a 9 by 13 inches baking pan and put the potato cubes in it. Drizzle olive oil over the cubes and toss them using a spoon, until they are coated properly with olive oil. Then sprinkle all the spices and again toss the cubes. Place the baking pan in the oven for an hour. Stir the potatoes after every 15 minutes. After an hour, remove the baking pan from the oven and serve the tasty roasted potatoes. Using Carrots Ingredients
  • Carrots, 6 large ones
  • Red potatoes, 6 small ones
  • Pepper, ¼ tsp.
  • Chili powder, ¼ tsp.
  • Rosemary, ½ tbsp.
  • Salt, 1 tbsp.
  • Olive oil, ⅓ cup
  • Garlic powder, ½ tsp.
Procedure Wash, peel, and cut the carrots and potatoes into small pieces. See that the carrot pieces are thin and do not exceed ¼ inch thickness. Cut the potatoes to small 1 inch cubes. Now, put these cubes in a baking pan, preferably 9 by 13 inches in size. Take a medium-sized bowl and combine olive oil and spices to it. Drizzle this mixture over the cubes and toss them properly. Place the baking pan in the preheated oven at 450°F for 30 minutes. After 30 minutes, use a fork and check whether the cubes are cooked. Then let the mixture cool for 5 minutes before serving.
