Chicken is a universally popular meat which is used to prepare various food recipes. However, at times, you get bored of making the same recipes again and again and need a change. Given below are some unique and scrumptious substitutes that you can try at home. Poblano Chicken Chowder Ingredients
  • Grilled chicken - 3 cups
  • Chicken broth - 3 quarts
  • Chicken bouillon granules - 1 tablespoon
  • Poblano pepper (diced in ½ inch pieces) - 3
  • Large onions (diced in ½ inch pieces) - 2
  • Large carrots (diced in ½ inch pieces) - 3
  • Celery stalks (½ inch pieces) - 5
  • White pepper - ½ tablespoon
  • Minced garlic - ⅛ cup
  • Fresh cilantro leaves (minced) - ½ bunch
  • Dried thyme - ¼ teaspoon
  • Ground cumin - ¼ teaspoon
  • Unsalted butter - ½ cup
  • Hot sauce - ½ cup
  • All-purpose flour - 1 cup
  • Heavy cream - 1 cup
  • Olive oil - ¼ cup
Directions Heat the olive oil in a large stockpot, and add the garlic, onions, carrots, poblano pepper, white pepper, celery, cumin, thyme, and salt to it. Sauté the vegetables until they become soft. Add the cilantro, chicken bouillon, and chicken broth to it and cook for 10 minutes more. Add the grilled chicken pieces to it, and stir the mixture well. Keep the mixture on the heat until it becomes thick enough. While the chicken is getting cooked, heat a skillet and melt the unsalted butter in it. Then, add the flour to the butter and mix it well. Stir the flour for 2 minutes without letting it turn brown in color. Now, add 1 cup of the chicken liquid mixture from the stockpot to the flour, and whisk it well. Then, add 2 more cups of this liquid to it (one cup at a time), and after stirring it, pour the entire mixture from the skillet back into the stockpot. Let this batter cook for about 5 minutes, or until it begins to thicken. Now, remove the stockpot from the heat and pour the batter into a serving bowl. Pour the hot sauce and cream on top of it and serve. You can increase the number of poblano peppers as per your preference. Monterey Chicken Fajitas Ingredients
  • Skinless, boneless chicken breasts (cut into strips) - 4
  • Onion (sliced) - 1
  • Green pepper (cut into 2 inch strips) - 1
  • Salsa - ½ cup
  • Cream of mushroom soup - 1 can
  • Olive oil - 2 tablespoons
  • Warmed tortilla - 8
  • Monterey Jack cheese (shredded) - 1 cup
Directions Heat the olive oil in a skillet and place chicken strips in it. Cook them until they turn brown in color. After that, add the onion and pepper to it, and cook it until the onion softens. Then, add the mushroom soup and salsa to the skillet and heat the mixture until the chicken gets thoroughly cooked. Once the chicken is done, place a piece on each of the tortillas, and garnish it with a generous amount of shredded Monterey Jack cheese and salsa. Chicken Biryani Ingredients
  • Chicken breasts (cut into pieces) - 4
  • Basmati rice - 2 cups
  • Onion (chopped) - 1
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Tomato puree - ½ cup
  • Garam masala powder - 2 teaspoons
  • Milk - ½ cup
  • Yogurt - 1 cup
  • Green chili paste - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Ground cayenne pepper - 2 teaspoons
  • Raisins - 10 to 12
  • Oil for frying
  • Salt to taste
  • Green coriander leaves for garnishing
Directions Take a large bowl and combine the onion paste, tomato puree, garlic paste, yogurt, ginger paste, green chili paste, cayenne pepper, turmeric, ground cumin, ground coriander, and garam masala (which contains black & white peppercorns, cloves, malibar leaves, long pepper, black cumin, cumin seeds, cinnamon, black, brown, and green cardamom, nutmeg, star anise, and coriander seeds) in it. Marinade the chicken breast pieces with this mixture, and keep it aside for 3-4 hours. Heat the oil in a large pan and sauté the chopped onion in it. Once it turns golden-brown in color, add the marinated chicken breasts to it. Cook it well for about 10 minutes. Add 4 cups of water to the Basmati rice. Add the milk, some saffron (if available), cardamom, and the chicken pieces to it. Mix it well, and pressure cook the mixture. Once done, garnish it with green coriander leaves and serve hot. The ingredients which are used in the above mentioned recipes, especially garam masala and Monterey Jack cheese, will be available in almost any grocery store.
