  • Eggs, 2 (lightly beaten)
  • Unsalted Butter, 2 tbsp. (melted)
  • Dried Dill, ½ tsp.
  • Vegetable Stock, 2 tbsp.
  • Flat Leaf Parsley, 1 tbsp. (minced)
  • Salt, ½ tsp.
  • Unsalted Matzo Meal, ½ cup (available in any store that stocks Jewish food products)
For the Broth Ingredients
  • Vegetable Stock, 6 cups
  • Onion, 1 (coarsely chopped)
  • Olive Oil, 2 tbsp.
  • Bay leaf, 1
  • Celery, 1 stalk (coarsely chopped)
  • Carrots, (¼ inch slices) (chopped)
  • Parsley, ¼ cup (coarsely chopped)
  • Salt and Pepper, to taste
  • Green onions with the green parts, 2 (coarsely chopped)
Preparation First, let's begin with the preparation of the Matzo balls. In a medium-sized bowl, stir together eggs, vegetable stock, and butter. Next, add the Matzo meal along with some parsley. Also add dill and sprinkle around ½ tsp. of salt. Stir the ingredients well. Cover it and refrigerate for around 8 hours. Bring a large pot of water to boil. Add some salt to it. Form around 12 balls from the dough. These should be approximately 1 inch in size. Drop the balls into boiling water. Once done, reduce the heat and let it simmer for half an hour. Ensure the Matzo balls are tender. Meanwhile, you can prepare the soup. Add onions, carrots, and celery in a large pot along with some olive oil. Boil it for about 5 minutes, till the vegetables get cooked well. Now, add some salt and pepper. Add the stock and bay leaf. Boil the preparation over high heat. Then, reduce the heat and let it simmer for 20 minutes. Add parsley along with the green onions. Let it simmer for 10 minutes. Once done, remove the bay leaf. Use the seasonings as per the flavors required. While serving, place the Matzo ball in a bowl and pour the hot soup over it. Generally, ingredients for the balls remain the same but you can change its consistency. In this case, you can make them hard or soft, depending upon your preference.
