But before we move on to an elaborate recipe, let's first learn how to prepare this sauce. Basic Recipe Ingredients:
  • Olive Oil, ½ cup
  • Vodka, ½ cup
  • Heavy Cream, 1 pint
  • Tomatoes, 1 large can (peeled)
  • Butter, 1 tsp.
  • Onions, ¼ cup (chopped)
  • Fresh Parsley, ¼ cup
  • Garlic Cloves, 2 (minced)
  • Salt and Pepper, to taste
Method: Mix oil, butter, onions, and garlic in a pan. Maintaining a medium flame, sauté until the onions become clear. Add vodka, tomatoes, cream, and parsley in the pan. Season the sauce with salt and pepper. Let it simmer for 5 minutes. Serve it hot. With Marinara Ingredients:
  • Marinara Sauce, 1 jar
  • Olive Oil, 1 tbsp.
  • Vodka, ¼ cup
  • Half-and-half Cream, ¾ cup
  • Onions, ¾ cup (chopped)
  • Garlic, 2 tsp. (minced)
  • Basil, ¼ cup (chopped)
  • Salt and Red Pepper Flakes, to taste
  • Parmesan Cheese, 2 tbsp.
  • Pasta, 1 lb. (cooked)
Method: Add red pepper flakes in the vodka and let it rest. Next, heat oil in a pan and add the onions. Let it cook until it turns pink. Once done, toss in the garlic and salt. Add the vodka and red pepper mix. Make sure you cook on high heat until the alcohol has almost evaporated. At this point, add the marinara sauce and let it simmer for at least 5 minutes. Add cream, basil, and Parmesan. Let it simmer for 10 minutes. Toss the final product into a bowl with hot pasta. With Chicken Sausage Rigatoni Ingredients:
  • Vodka, ⅓ cup
  • Olive Oil, 1 tbsp.
  • Heavy Cream, 1 cup
  • Butter, 1 tbsp.
  • Chicken Sausage, 1 lb. (without casing)
  • Rigatoni, 1 lb.
  • Whole Tomatoes with Basil, 1 can
  • Onions, ½ cup (chopped)
  • Garlic Cloves, 3 (finely chopped)
  • Green Pepper, ½ cup (roughly chopped)
  • Jalapeno, 1 (chopped)
  • Hot Paprika, 1 tsp.
  • Italian Seasoning, 1 tsp.
  • Asiago Cheese, 1 cup (grated)
  • Parsley, 3 tbsp. (freshly chopped)
  • Salt, to taste
  • Black Pepper, to taste (freshly ground)
Method: Boil the pasta, and keep it aside. Make sure the pasta is just perfect and not too soft or over boiled. Next, in a large pan, melt butter along with the oil. This should be done on medium heat. Add the chicken sausages and brown them for a few minutes. Also, break them up into moderately large chunks. Put the jalapenos and garlic in the pan, and sauté for 5 minutes. Add green pepper, paprika, Italian seasoning, salt, and pepper. Let this mixture cook for 3 minutes. Add tomatoes to the mixture and allow them to simmer in it for 10 minutes. Add the vodka and cream, and cook for a few more minutes. Toss in the cheese and parsley. Mix this sauce with the pasta, until it gets well coated. Use the salt and pepper to season the dish, as per your taste.
