Well-prepared pork ribs that are tender yet succulent are relished by all. However, this is one delicacy that does not come easy. It requires a fair amount of time and energy to achieve perfection. You can avoid the usual pitfalls while grilling the ribs by taking care of a few things. For great results, marinating the ribs overnight or at least for 12 hours is recommended, after which they must be grilled over low heat for 3-4 hours. Seasoning: The first step is to season the ribs. It helps in adding flavor to the meat and in making it tender, as well. You can use a combination of herbs or spices for seasoning the meat. A simple yet flavorful option is to use a mixture of salt, black pepper, sugar, paprika, and garlic powder. Firstly, remove the silvery membrane that you can see along the bone on the underside of the fat layer. Randomly score the meat and apply the prepared mixture over it. Then, cover the meat with a plastic wrap, and refrigerate it overnight. Preparing the Grill: A gas grill heats up faster and is easier to clean. However, the charcoal grill has the advantage of lending the meat a smoky flavor. You can use either of the two while grilling the ribs. Clean the grate of the grill by using a wire brush or aluminum foil and then grease it with vegetable oil. Place an oven thermometer on the grill close to where you will be placing the ribs. Heat the grill to a temperature between 200 °F and 225 °F. Grilling: Once the grill has reached the desired temperature, place the ribs on the grate, and close the lid. The trick is to grill them over low indirect heat for a few hours. After about 45 minutes, check if the temperature of the grill is the same. To keep the ribs moist, brush them with a sauce of your choice, such as barbecue sauce, from time to time while they are being cooked. Check one of the ribs after three hours to see if it is done. The meat will turn white or tan around the bone and pinkish towards the surface if it is done. If the slab of the meat is thick, it can take up to 5 hours to cook. If you want a quick way of grilling the ribs, you can braise them for 30 minutes to an hour.
