Seafood is something I can't live without and I am sure many would nod in favor to what I say! Well, I came across this interesting dish at a housewarming party few months back. Ever since I have sunk my teeth into the grilled mahi mahi dish, I must say, I have found excuses for cooking the same whenever I get the chance. This makes a very delicious and interesting dish to prepare and to gorge on as well. Friends have been kind with me to share some yummy recipes. Let's have a look at them. Recipe 1 Ingredients
  • White wine, ½ cup
  • Shallot (minced), 1
  • Garlic cloves, 2
  • Extra-virgin olive oil, 1 tablespoon
  • Walnuts (chopped), ⅓ cup
  • Mahi mahi fillets, 6 ounces
  • Salt and ground black pepper, according to taste
  • Butter, 1 tablespoon
  • Salt, ¼ teaspoon
  • Fresh cilantro leaves, ¼ cup
  • Parmesan cheese (shredded), 2 tablespoons
  • Red bell peppers (roasted), 12 ounces
  • Ground black pepper, ⅛ teaspoon
Preparation Begin by preheating an outdoor grill. Then, place the shallot and the wine in a saucepan kept over medium-high heat. Boil this mixture and then, reduce the heat. Let the liquid reduce to half. Once done, remove the pan from the heat, and place it aside. Meanwhile, blend the walnuts, cheese, and garlic in a blender. Add in the cilantro with the olive oil. Sprinkle some black pepper. Blend till the mixture turns smooth. Place the cilantro mixture aside in a separate bowl. Now, add the red peppers to the food processor. Add the wine mixture to this, and blend till it smoothens. Once done, pour the entire mixture into the saucepan and boil it over medium-high heat. Then reduce the heat and let it simmer for 4 minutes. At the same time, use some salt and pepper and season the mahi mahi fillets. Cook them on the preheated grill till the fish turns a shade of golden brown. Cook for about 4 minutes on both sides. Meanwhile, mix the butter with the black pepper and salt and add this to the red pepper sauce. Whisk it till it smoothens and spoon this sauce on the bottom of the serving plate. Place the mahi mahi fish fillets over this. Serve the fish with the cilantro mix prepared earlier. Recipe #2 Ingredients
  • Olive oil, ¾ cup
  • Soy sauce, ¼ cup
  • Lime (juiced), 1
  • Orange (juiced), 1
  • Lemon (juiced), 1
  • Bay leaves, 2
  • Garlic cloves (thinly sliced), 6
  • Mahi mahi fillets (boneless), 4
  • Fennel bulb (thinly sliced), ½
  • Red onion (thinly sliced), ½
  • Black peppercorns (toasted and crushed), 12
  • Ginger (peeled and sliced), an inch piece
Preparation Take a large bowl and pour the olive oil along with the soy sauce in it. Pour the orange, lemon, and lime juice into the bowl. Then, add the remaining ingredients―bay leaves, garlic, fennel, red onion, black peppercorns, and ginger―into the bowl. Mix them well. Meanwhile, prepare the grill. Place the mahi mahi fish fillets in this marinade, and set it aside for 10 minutes. Evenly coat both sides of the fish with the marinade. Remove these and grill for 4 minutes on both sides. Serve hot.
