- Cake flour - 6 cups
- Baking powder - 2 tablespoons
- Salt - 1 teaspoon
- Egg whites - 10
- White sugar - 2 cups
- Shortening - 1½ cups
- Milk - 2 cups
- Vanilla extract - 6 teaspoons
- Softened butter - 1 cup
- Confectioners' sugar - 4 cups
- Measure the flour and the add baking powder and half teaspoon salt to it. Sift this mixture.
- Beat the egg whites until they become fluffy, and then add 1 cup confectioners' sugar and beat this mixture until the ingredients are mixed thoroughly.
- Cream the shortening with 2 cups of white sugar until the mixture becomes light and fluffy.
- Now gently stir in the flour and the milk.
- Add the milk and flour in several batches of small quantities and smoothen out the mixture after every addition.
- Add 2 teaspoons of the vanilla extract and the egg whites mixture to it and mix the batter thoroughly.
- Once the batter is ready, pour it into two three-inch deep round pans (one with 10 inch diameter and the other 8 inch).
- Line the bottom of the pans with baking paper.
- Fill the pans with the batter. Bake the cakes at 175 °C (350 °F).
- Bake the 8-inch cake for about an hour and the 10 inch one for one hour and ten minutes.
- Take out the cakes and place them on racks to cool for around ten to fifteen minutes.
- After the cakes have cooled down, loosen them from the sides of the pans and turn them out on the racks.
- Now brush them to remove any loose crumbs so that you have two plain and smooth round cakes which are ready to be decorated with icing.
- Cream one cup butter with two cups confectioners' sugar, gradually.
- Add the sugar slowly and keep on blending simultaneously.
- Add four teaspoons of vanilla extract and half teaspoon salt to the mixture.
- Then gently add the milk and the remaining confectioners' sugar and beat the mixture constantly.
