  • 2 large potatoes
  • 2 cups chicken broth
  • ½ cup flour

Preparation Scrub and bake potatoes at 350°F for about an hour. Mix the flour and butter to prepare a roux. Add milk and allow it to thicken. Following this, add chicken broth.   • 6 potatoes, pared and cut in 1-inch chunks

  • 5 cups chopped peeled potatoes
  • 1 cup shredded cheddar cheese
  • 3 cups half-and-half
  • 3 tbsp butter
  • 1 chopped onion
  • 2 tsp salt
  • 3 tbsp chopped fresh flat-leaf parsley
Preparation Boil potatoes, onion and salt. On bringing it to boil, reduce the heat and allow it to simmer for about 12 minutes, until the potatoes and onions become tender. Remove the potatoes and onions from the pan and mash them smooth. Then, heat the potato-onion puree in a skillet. Add butter and half-and-half to it. Maintain medium heat. Take care that it should not come to a boil. Following this, add cheese and stir until it melts. Garnish with parsley and serve hot.
Potato Chicken Soup Ingredients
  • 8 cubed potatoes
  • 6 cubes chicken bouillon
  • 2 stalks celery (diced)
  • 1 chopped onion
