Cooking for dinner, after a long day, definitely seems like an exhausting idea. Here are some recipes that can be prepared quickly in no time at all.

Dinner time should be a complete family time. And if there is no family, then at least a happy meal time. But cooking a meal after a long day at work sounds boring and people tend to consume ready-to-eat meals that are not a very healthy option. Let us have a look at some easy recipes that can be prepared for dinner. Creamy Chicken Stew Ingredients:
  • 1 pound, chicken breast (boneless; skinless)
  • Condensed cream of chicken soup
  • ½ pound, small potatoes
  • ¼ cup, zest Italian dressing
  • 1½ cup, green peas, carrots, and beans
  • ¼ cup, water
  • 1 tablespoon, olive oil
  • ¼ cup, cheese spread
Pour some water in a microwave proof dish. Add the potatoes and microwave it on high until they are tender. In a saucepan, heat some oil over medium heat, add the chicken pieces and stir continuously, until browned from all sides. Add steamed potatoes, vegetables, and condensed cream soup to the saucepan. Stirring continuously, bring it to a boil, let it simmer until the chicken and vegetables are cooked. Stir in the Italian dressing and cheese, just before serving it hot. Spinach Stuffed Shells Ingredients:
  • 20-22 pieces, pasta stuffing shells (cooked)
  • 1 cup, pasta sauce
  • ½ cup, cottage cheese
  • ½ cup, mozzarella cheese
  • 1 cup, spinach (chopped)
  • 1 egg white
  • ½ each, red and yellow pepper (chopped)
  • 1 teaspoon, dried herb leaves
In a large bowl, combine the spinach, crumbled cottage cheese, half mozzarella crumbled cheese, chopped peppers, egg white, and dried herb. Using a spoon, stuff the pasta shells with a heaping of this mix. In a baking dish, spread half the sauce, place the shells, careful not to overlap each other, drizzle remaining the sauce and sprinkle mozzarella cheese over it. Cover it with foil and bake in a preheated oven at 400 °F for half an hour. Wait another half an hour before removing the foil. Serve warm. Thai Beef Curry Ingredients:
  • 1 pound, steak (thinly sliced)
  • ½ onion (sliced)
  • 1 bell pepper (sliced)
  • 1½ tablespoons, Thai red curry paste
  • ½ cup, spinach
  • 3 tablespoons, basil leaves (minced)
  • 2 cups, coconut milk
  • ½ cup, mushrooms (sliced)
  • 1 garlic clove (minced)
  • 3 tablespoons, vegetable oil
In a wok, heat one tablespoon oil on high, toss in beef slices, and minced garlic. Stir until the beef browns lightly. Set aside. Heat the remaining oil in wok, add the onion and pepper, followed with mushrooms, and stir-fry until all the vegetables are tender. Add curry paste, coconut milk, and fish sauce, bring to a boil, stirring occasionally. Reduce heat, simmer, and add beef and spinach. Stir often until the beef is cooked. Chocolate Mousse Ingredients:
  • 3 tablespoons, cocoa powder
  • 1 ounce, unsweetened chocolate (finely chopped)
  • 1 cup, sugar
  • 1 teaspoon, vanilla extract
  • 1 envelope gelatin
  • 1 cup, milk
  • 1 teaspoon, vegetable oil
  • 2 cups, cream
Dissolve gelatin in milk, in a saucepan over low heat. In a bowl, mix together cocoa powder, finely chopped unsweetened chocolate, sugar, and vegetable oil. Add all this in the saucepan, stirring constantly until smooth. Remove from heat and let it cool. Cover and chill. Whip half the cream with vanilla to make stiff peaks, fold into the chilled chocolate. Scoop it and add into individual dessert bowls, cover, and refrigerate overnight. Before serving, top it with some more whipped cream.
